Discovery of the day...
Baking soda and baking powder are NOT synonyms.
They are opposites.
Which would explain why my muffins came out flat...
Also, be careful when holding a small glass container of just melted butter. It's kind of hot. And tends to dribble in places you weren't intending for it to go...like under the muffin liners. Or all over the pan you're baking them in.
And flour is still messy if you stir it too fast.
